Today’s recipe features a delicious, savory fork and knife cauliflower waffle breakfast sandwich that will take your meal to a whole new level.
Breakfast sandwich made out of cauliflower?
I just cannot believe we are here, in 2017, eating breakfast sandwiches made out of cauliflower waffles.
It seems odd, but at the same time, it seems totally normal because these are the types of things we eat in 2017 (or was that totally 2016?).
It may or may not require a fork & knife
And I won’t lie – this is the type of breakfast sandwich that 9 times out of 10 requires a fork and knife.
Unless you’re incredibly ambitious, with goals for the new year, and all, then you can attempt to pick this bad boy up and eat it caveman style.
Eating a sandwich knife and fork style reminds me of those hot beef and hot turkey sandwiches you get at a diner – the ones with mashed potatoes and gravy – but this is minus the gravy, mashed potatoes and 2,000 calories (although I love a good hot beef).
Cauliflower waffle breakfast sandwich details
This sandwich is made out of those fluffy, savory cauliflower waffles I made for you a few months ago, but stacked high with melt-in-your-mouth muenster, crispy bacon, creamy avocado, and, of course, a fried fricken egg.
With the runny yolk, which despite being a ‘food that is no longer trending in 2016’, will always be trending.
That’s the silly thing about food trends – they try and tell you delicious food is no longer in style, but over here in The Gourmet RD kitchen, we will eat cauliflower waffles and fried eggs until the cows come home.
And we will add avocado and bacon and freshly-made Wisconsin cheese and call it a sandwich.

Cauliflower Waffle Breakfast Sandwich
This savory fork and knife breakfast sandwich features eggs, avocado, cheese & bacon and is guaranteed to take your breakfast or brunch to a whole new level.

- 2 cups cauliflower crumbles*
- 4 large eggs
- ¼ cup almond, oat or whole wheat flour*
- 1 teaspoon baking powder
- ½ teaspoon coarse salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ cup sharp cheddar cheese
- 4 slices muenster cheese
- 8 strips bacon, cooked
- 2 ripe avocados, sliced
- 4 large eggs, fried
- Place cauliflower crumbles, eggs, flour, baking powder, salt, pepper, onion powder and garlic powder into a bowl and whisk until combined. Fold in cheddar cheese.
- Heat a Belgian waffle maker to medium heat. Coat with cooking spray. Scoop ½ cup batter and spread on the bottom of the waffle maker. Close lid and cook 4-6 minutes, until waffle is browned and cooked through. Remove and repeat with remaining batter, coating with cooking spray between each waffle.
- Break waffles into quarters. Top half of the quarters with a slice of cheese, bacon, avocado and a fried egg. Top with other quarters of waffle to make a sandwich.
Cooking Tip: If using whole cauliflower: Remove the leaves and stems of 1 medium cauliflower. Cut into florets. Place in the food processor and pulse until crumbled. 1 head should make approximately 2 cups crumbles.
