How to make roasted sweet potato wedges

Today’s version of a snack attack is actually pretty darn good-for-you.  Which in this house means it can also be equally delicious.

They’re sweet potato wedges that are spiced and roasted until super crispy on the outside, but fluffy and soft on the inside.  

When you have a super hot oven and the right amount of oil, potatoes can be just as yummy roasted as they are deep-fried.  No lies here, folks.

In fact, one can even make curly fries in the oven (with sweet potatoes AND beets!).  Remember that?!  

So basically, I’m saying that we can make all sorts of veggies into delicious fries or wedges or whatever, and they can be crispy and salty and super delicious.

What spice mixtures can you use for flavor?

They can also be spiced with whatever mixture you’re into at that moment.  Mexican (chili powder, cumin, smoked paprika).  

Indian (coriander, cardamom, turmeric, cumin).  Italian (basil, oregano, thyme).  

And they can all be spicy with a pinch or several pinches of crushed red pepper flakes. 

And they can all be dipped in copious amounts of garlic lemon aioli because life is super short and sweet potato wedges with aioli is life.

Roasted Sweet Potato Wedges

Ingredients

Sweet Potato Wedges:

  • 5 medium sweet potatoes, cut into 1-inch wedges
  • 23 tablespoons oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

Mexican-Spiced:

  • ¾ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • Pinch crushed red pepper flakes

Indian-Spiced:

  • 1 tablespoon garam masala
  • ¼ teaspoon ground turmeric
  • Pinch crushed red pepper flakes

Italian-Spiced:

  • 1 tablespoon Italian seasoning
  • Pinch crushed red pepper flakes

Garlic Aioli:

  • ¼ cup mayonnaise
  • 3 cloves garlic, peeled and minced
  • 1 tablespoon lemon juice
  • Coarse salt and ground black pepper, to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Place sweet potato wedges on a greased baking sheet and toss with oil, salt and pepper.
  3. Choose a spice combination (Mexican, Indian or Italian) and whisk together in a bowl until combined. Add spice mixture to oiled sweet potato wedges and toss to coat.
  4. Roast 35-40 minutes, until soft on the inside and crispy on the outside.
  5. While sweet potatoes roast, whisk together aioli ingredients until combined. Refrigerate until ready to use.
  6. Serve spice-roasted sweet potato wedges with garlic aioli for dipping.

Notes

Cooking Tip: Grill the sweet potatoes on an outdoor grill heated to medium for 15-20 minutes, flipping once.
