Simple Spaghetti with Peas, Garlic, and Parmesan

Be honest, when you were a kid I bet you didn’t say, “Mooooom, please give me some pasta with peas please.”

It’s amazing how much our palates change over the years.

Remember how I told you we are Netflix bingeing on Dexter?  Well, we have 2 episodes left in the entire series and I can’t bring myself to watch them.  Why?  Because that means it’ll all be over.  No. More. Dexter.  

And I just don’t know what I will do with myself.  Do you ever finish a TV or book series and feel like you lost your best friend?  That’s how I am feeling right about now.  

Ben keeps assuring me that it’s just a TV show and not real life {not that I want to surround myself with serial killers, but you know what I’m sayin’}, but it’s still rough.

I know.  There are more important things to spend my energy on.

How to make spaghetti with peas

Spaghetti is arguably the most delicious of all pasta. I think it might have something to do with the fact that you can twirl up a huge forkful and stuff it in your mouth all at once.

And it’s all good because it’s just one bite, so no one can judge you.

Quick and easy pasta with peas

That’s precisely why I chose spaghetti for this delicious 20-minute pasta dish filled with olive oil, garlic, spring peas, Parmesan and egg yolk {because it makes it feel carbonara-ish}.

It really should become one of those go-to weeknight meals that you can pull out of your back pocket.  Because we all want dinner on the table in 20 minutes, and want it to be something yummy {we all deserve yummy dinners}.  

And if you want some good ol’ protein, just top your pasta with salmon or chicken breast, or whatever suits you.  What more could you ask for?

Simple Spaghetti with Garlic, Peas & Parmesan

Simple Spaghetti with Peas, Garlic & Parmesan

Just a few simple ingredients gets you a luxurious carbonara-like spaghetti dish with olive oil, garlic, spring peas, Parmesan and lemon.

  • 12-ounce box whole grain spaghetti
  • ¼ cup + 1 tablespoon extra virgin olive oil
  • 4 cloves garlic, minced
  • 3 large egg yolks, beaten
  • 1 cup cooked baby peas
  • ½ cup freshly shaved Parmesan cheese, divided
  • Coarse salt and freshly ground black pepper, to taste
  • Fresh lemon zest and juice, to taste


  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions, until al dente.
  2. Drain pasta, reserving 1 ¼ cups pasta water for later use. Coat pasta with 1 Tbsp. olive oil and set aside.
  3. Place ¼ cup olive oil in the large pot on medium-high heat. Add garlic and cook until fragrant, about 30-60 seconds. Add pasta back in to the stock pot, then the pasta water and simmer until liquid is reduced by half. Remove from the heat and stir in the beaten egg yolks until it starts to thicken.
  4. Stir in peas and half the Parmesan cheese.
  5. Season with salt, black pepper and lemon zest and juice, to taste. Remove from heat and place in bowls.
  6. Garnish with remaining Parmesan cheese.


Pasta Cooking Tips: 

  • Use a gallon of water per pound of pasta
  • Heavily salt the water (this keeps the pasta from sticking together)
  • Make sure the water is at a rolling boil before adding the pasta
  • Toss the pasta in the sauce or olive oil immediately after draining
