It’s snack time! And when I say snack, I specifically mean these Pumpkin Cookie Dough Bites.

How to make this delightful snack

I’m talking about these babes, which are a mouthful, literally (in such a good way).  As soon as I tell you what’s in these puppies, and how easy they are to make, you’re going to be all over it.

So here it is: old-fashioned oats, flax, pumpkin, peanut butter, honey and vanilla extract.  Everything goes in the food processor for a ride, then the dark chocolate chips get mixed in and rolled into bite-size morsels of pure fall deliciousness.  It’s like raw cookie dough, but totally guilt free.

So how do you feel about such a scrumptious snack that provides fiber, protein and heart-healthy fats, are easy to make and the whole family will love? I simply cannot think of a better snack. Plus, you can prep these in advance and store them in the refrigerator or freezer and pop them into lunch bags whenever it feels right.

Simple energy bites made with pumpkin, nut butter, oats, honey and dark chocolate chips.

Ingredients

  • 1 ½ cups old fashioned rolled oats
  • ½ cup ground flaxseed
  • ½ cup peanut butter
  • ½ cup pure pumpkin puree
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips

Instructions

  1. Place all ingredients, except chocolate chips, in the food processor and pulse until dough has formed. Stir in chocolate chips. Place in the refrigerator for 15-30 minutes.
  2. Form bite-sized balls of dough and place in an airtight container.

Notes

Storage Tip: Store in an airtight container in the refrigerator up to 7 days and in the freezer up to 2 months.
