Mediterranean Chickpea Tuna Salad

An easy, simple, nutritious and delicious mediterranean recipe for chickpea tuna salad that comes together in just 10 minutes! 

Ingredients

Units Scale

Dressing:

  • 1 tablespoon red wine vinegar
  • 1 tablespoon marinade from a jar of marinated artichokes (optional)
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano leaves
  • Coarse salt and ground black pepper, to taste

Salad:

  • 15-ounce can chickpeas, rinsed and drained
  • 2 2.6-ounce pouches albacore white tuna
  • 1/2 pint cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1 cup pitted Greek olives
  • 1 cup marinated artichoke hearts, drained (optional)

Instructions

For the dressing:

  1. In a medium mixing bowl, whisk together the dressing ingredients. Season to taste with salt and black pepper.

For the salad:

  1. Stir in the chickpeas, tuna, tomatoes, cucumber, olives and artichokes.
  2. Taste and adjust the seasoning, if necessary.
