Cranberry-Orange Glazed Turkey Breast + Apple Sausage Stuffing

I really really really love Thanksgiving. So here’s a perfect Thanksgiving-inspired recipe for glazed turkey breast and apple sausage stuffing.

The turkey breast has a simple glaze that has fresh orange juice and zest, bursting cranberries and a little sugar to balance it out.

It’s paired with apple sausage stuffing that’s a tad sweet from apples with the perfect saltiness from the sausage and whole grain bread that makes it wholesome and earthy.

Thanksgiving Classics.

I look forward to making some of my favorite traditional Thanksgiving dishes every single year: a gigantic, crispy oven turkey with all the aromatics, buttery mashed potatoes, sage stuffing made from homemade whole grain bread, cast iron bacon Brussels sprouts, cider honey carrots, fluffy yeast rolls and my grandma’s pumpkin pie. 

Godddd I’m so hungry right now!  How can this not be your favorite holiday?!

It’s also super fun because it’s my hubby’s birthday and we have a get-together with all of our family and friends each year to celebrate, and my mom, sister, aunt and I go shopping the day before (not black Friday!) Thanksgiving and get Chinese food and buy fun things. 

It’s just a great time of year.

Sometimes you (I) want Thanksgiving-type food when it’s not Thanksgiving, and no, I’m not going to make that whole spread right before the big day or on other random days, and sometimes people have smaller gatherings where they don’t require an entire turkey and all the fixins’, so that’s where this menu comes in. 

It’s comforting with all the holiday feels without a bunch of fuss, and honestly, it can be whipped together in under 2 hours.  Promises.

The star of the show is the cranberry-orange glazed turkey breast. 

The simple glaze has fresh orange juice and zest, bursting cranberries and a little sugar to balance it out.  It’s smothered on a crispy-on-the-outside, tender-on-the-inside.

So, so, so delicious.  This bird is the word.

And the stuffing is such a delight, mainly because it’s a tad sweet from apples with the perfect saltiness from the sausage. 

The whole grain bread just makes it earthy and wholesome, and you know I lovvvve that.

Cranberry-Orange Glazed Turkey Breast + Apple Sausage Stuffing

Ingredients

Stuffing:

  • 4 tablespoons butter
  • 3 ribs celery, chopped
  • 1 yellow onion, chopped
  • 1-pound ground Italian sausage
  • 3 tart apples, chopped
  • 1 loaf whole grain bread, cut into cups (about 8 cups)
  • 2 tablespoons fresh sage, finely chopped
  • 2 large eggs
  • 3 cups low sodium chicken or turkey stock
  • 1 ¼ teaspoons coarse salt
  • ½ teaspoon ground black pepper

Glaze + Turkey:

  • ½ cup whole cranberries
  • Zest and juice of 1 medium orange (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tablespoons canola oil
  • 1 boneless skinless turkey breast (about 23 pounds)
  • Coarse salt and ground black pepper

Instructions

  1. Preheat oven to 375 degrees.
  2. To make stuffing: Melt butter in a large skillet over medium-high heat. Add celery and onion; cook until soft, about 4-5 minutes. Add sausage and cook until browned, about 5 minutes. Add apples and continue to cook until soft, about 4-5 minutes. In a bowl, combined sausage/veggie mixture, egg, bread cubes and sage and mix until combined. Add chicken stock and season with salt and pepper. Transfer mixture to a greased baking dish. Place in the oven and cook for 30-35 minutes, until top is browned.
  3. To make cranberry glaze: In a medium saucepan, bring cranberries, orange zest and juice and sugar to a simmer. Cook 10-15 minutes, until cranberries burst. Use an immersion blender to puree cranberry mixture. Set aside.
  4. To make turkey breast: In a large cast iron skillet, heat oil to medium-high. Season turkey breast generously with salt and pepper. Place in hot cast iron skillet and sear all sides until browned and crispy. Spoon half of the cranberry glaze over the turkey. Roast in the oven 20-30 minutes, until internal temperature reaches 160 degrees. Remove from the pan, spoon remaining cranberry glaze over the turkey breast, and let rest 10 minutes. Slice and serve with stuffing.
