Healthy Vegetarian Recipes
A vegetarian version of traditional lettuce cups which are often made with meat. Instead, these are filled with riced cauliflower and toasted walnuts with a Thai-inspired sauce.
They’re cooked on the stovetop in less than 30 minutes from start to finish and keep well as leftovers for up to 4 days.
An easy one pot meal that’s prepared with chickpeas, spinach, tomatoes, and plenty of flavor-filled ingredients and spices. It pairs well with cooked quinoa or brown rice for a complete meal.
To level it up, top with peanuts or cashews for an extra crunch!
These Brussels sprouts make an incredible side dish. They’re seared in a hot skilled giving them a caramelized, crunchy exterior.
An Asian-inspired spicy sauce made from Thai chilies, crunchy peanuts, and green onion come in at the end to really take them to the next level.
This Texas Caviar is the ultimate vegetarian appetizer that you won’t want to stop eating once you start. It’s wildly easy to make and features black-eyed peas, black beans, loads of fresh veggies, herbs and a light dressing.

These fritters are made with tangy marinated artichokes and creamy goat cheese. They’re made into a batter and lightly pan-fried until golden brown. Dip them in a lemon aioli and you’ll be totally smitten!

This soup is a delicious blend of fantastic flavors. The sweet potatoes pair so nicely with the coconut milk, ginger, curry paste and lime, and when whirled together with the immersion blender, it becomes this luscious and creamy soup that is honestly to-die-for.
This fresh salad is a mix of baby spinach, toasted walnuts, feta cheese, mandarin oranges and an easy homemade raspberry vinaigrette. Simply blend together fresh raspberries, fresh orange juice and zest, olive oil, red wine vinegar, Dijon and a touch of honey.

These curry lentil cakes are packed with lentils, onion, garlic, cilantro, lemon and curry powder. They’re pan-fried until golden brown then topped with a dollop of tangy yogurt.

It’s basically a vegetarian spaghetti carbonara with spring peas, garlic, egg yolks, lots of olive oil and freshly grated Parmesan cheese. The yolk and pasta water make a glossy, delicious sauce that is simple, yet oh-so fantastic.
You’ll definitely be making this one over and over again – I promise!
Baked falafel is super easy to make. Simply whirl together edamame, breadcrumbs, lemon, garlic and herbs in a food processor. Form mixture into balls and bake them until firm and lightly crispy on the outside.
Don’t forget to dip them in lemon garlic aioli! Or stuff them in a wrap or add them to your salad for extra protein and fiber. Yum!
You can easily make your own ravioli at home using wonton wrappers! Dollop this spinach, ricotta and artichoke filling on top of a wonton wrapper, then secure another one over the mixture to make a ravioli. Boil them, then toss in olive oil and serve with Parmesan cheese.
You’ll wonder why you haven’t been making wonton ravioli all along!
